Ground almonds All purpose flour Baking powder Fine salt Eggs Orange zest Super fine sugar Almond extract Vegetable oil Apricot jam Flaked almonds Confectioner's sugar

SIFT TOGETHER FLOUR, SALT AND BAKING POWDER AND THEN STIR IN GROUND ALMONDS.

STEP 1

BEAT EGGS AND SUGAR UNTIL PALE AND FROTHY, THEN BEAT IN OIL, ALMOND EXTRACT AND ORANGE ZEST.

STEP 2

FOLD IN GROUND ALMOND MIXTURE AND THEN POUR INTO A 20CM  CAKE TIN. BAKE FOR 35-40 MINUTES.

HEAT APRICOT JAM AND SPREAD OVER, THEN SPRINKLE ON ALMONDS AND CONFECTIONER'S SUGAR.
