WHISK EGG WHITES WITH CREAM OF TARTAR UNTIL THEY FORM WHITE, SOFT, FOAMY PEAKS.

STEP 1

GRADUALLY ADD SUGAR AND BEAT UNTIL STIFF PEAKS FORM, ADD VANILLA AND COLOURING.

STEP 2

FOLD IN ALMOND FLOUR AND CONFECTIONER'S SUGAR UNTIL A FIGURE OF 8 CAN BE FORMED.

STEP 3

PIPE CIRCLES AND ADD DRIED MANGO, LEAVE TO REST FOR 20-40 MINUTES. BAKE FOR 18 MINUTES.

PUREE AND THEN HEAT MANGO ON STOVE, PRESS THROUGH A SIEVE AND LEAVE TO COOL.

BEAT BUTTER AND CONFECTIONER'S SUGAR, ADD SOME MANGO PUREE AND MILK IF NEEDED.

STEP 6

PIPE BUTTERCREAM SWIRLS AROUND EACH MACARON. ADD MANGO PUREE TO THE CENTRE.

STEP 7

PLACE A MACARON SHELL ON TOP, SQUEEZE TOGETHER SLIGHTLY TO SECURE IN PLACE.
