BEAT SOFTENED BUTTER WITH CONFECTIONER'S SUGAR UNTIL SMOOTH, THEN BEAT IN ORANGE ZEST AND JUICE.

STEP 1

SIFT TOGETHER FLOUR AND SALT AND THEN MIX INTO THE  CREAMED BUTTER, SUGAR AND ORANGE MIXTURE.

STEP 2

MIX IN CHOPPED DRIED CRANBERRIES AND  PISTACHIOS AND BRING TOGETHER INTO A BALL.

STEP 3

ROLL INTO A SAUSAGE SHAPE, WRAP IN PLASTIC WRAP AND REFRIGERATE FOR AT LEAST AN HOUR.

STEP 4

CUT INTO 12 COOKIES AND THEN BAKE FOR 25-30 MINUTES UNTIL GOLDEN. LEAVE TO COOL.

DECORATE WITH MELTED CHOCOLATE, CHOPPED PISTACHIOS, CRANBERRIES AND ORANGE ZEST.
