Vegan Olive Oil Cake

A soft cake with undertones of olive oil, almonds and cardamom.

Extra Virgin Olive Oil Almond Milk Cardamom Pods Flaked Almonds Plain flour Baking Powder Almond Essence Cider Vinegar Baking Soda Salt  Superfine Sugar Confectioners Sugar

Dairy free vegan cake is delightfully soft and moist!

Mix together almond milk and cider vinegar. Sift flour, baking soda, baking powder and salt together. Retrieve seeds from cardamom pods.


Add your flour mixture to your mixing bowl. Mix your sugar, olive oil and almond essence with your milk mixture.


Gradually add your wet mixture to your flour mixture and beat. Mix in your almonds and cardamom seeds.


Pour your Olive Oil cake batter into your cake tin and evenly sprinkle over flaked almonds.


Bake for about 45 minutes. Cool, remove from the tin.  Sift over confectioner's sugar.
