Malteser Rocky Road

  • 120 g unsalted butter (US = ½ Cup or 1 stick)
  • 4 tablespoon golden syrup
  • 100 g 70% cocoa solids dark chocolate broken into small pieces (US = 0.6 Cup)
  • 200 g milk chocolate broken into small pieces (US = 1 Cup and 1 tbsp)
  • 50 g small marshmallows (US = 1½ Cups)
  • 50 g raisins (US = ⅓ Cup)
  • 50 g malted milk biscuits broken into small pieces
  • 100 g Maltesers (roughly half of a 189g share bag)

Topping

  • 50 g white chocolate (US = ⅓ Cup)
  • 100 g Maltesers

Here's what we do...

Malteser Rocky Road

  • Grease your baking tin and then line it with greaseproof (baking) paper, crossing over so that both sides and the base of the tin are covered.
  • Add your butter and syrup to your small saucepan and melt slowly over a low heat.
  • Mix in your dark and milk chocolate until totally melted.
  • Leave to cool.
  • Add your marshmallows, malted milk biscuit pieces and raisins and mix in. You may find it easier to mix these separately first and then add them all together to ensure they are evenly mixed in.
  • Add your Maltesers and mix thoroughly together.
  • Place in your prepared tin and spread out evenly.
  • Refrigerate and for 3-4 hours until totally set.

Topping

  • Melt your white chocolate by chopping it up and placing it into a heat proof dish over a gently simmering pan of water. Stir until melted.
  • Dip a teaspoon into the chocolate, hold it high over your set rocky road and drizzle over.
  • Refridgerate until set.
  • Cut the Malteser Rocky Road into 16 pieces.

Supporting Notes

TOP TIPS
If your chocolate doesn't melt thoroughly place the butter, syrup and chocolate mixture back onto a low heat and stir until melted.
Grease your baking tin before covering it with your greaseproof paper, it will ensure it sticks and does not move when you add your Rocky Road mixture.
Mix your biscuits, raisins, marshmallows together before adding them to your melted chocolate so as to ensure they are evenly mixed in.
Always use good quality chocolate. I use Lindt 70% Cocoa dark chocolate and Cadburys Dairy Milk (affiliate link). This Rocky Road only has a few ingredients so they need to be of good quality.
STORAGE
Keep refridgerated for best results.
You can freeze Rocky Road in an airtight container.
It is fantastic to make ahead of time, especially if you want to bring it out as a treat at Christmas for example.
