    Malteser Rocky Road

    Chunky Malteser Rocky Road is packed full of sweet goodies, every bite bursts with Maltesers, marshmallows, biscuit pieces and raisins, all held snuggly together in a soft melt in the mouth blend of chocolate.

    My son says this Malteser Rocky Road is “mind-blowingly good”. I'll take that.

    My husband (Mr "not very cakey") adores it.

    It is superb though. But just don't dwell on the calories 🤣.

    Instead...consider these huge selling points of this Malteser Rocky Road recipe:

    A blend of 2:1 milk to dark chocolate. Enough dark chocolate for that slight tinge of bitter chocolate, but extra milk chocolate to ensure that tinge stays just that. Then a generous blobby drizzle of white chocolate over the top. Oh. My. Word.

    Both dark and milk chocolate are mixed into melted butter and golden syrup. Adding fat to chocolate gives it a smooth, soft and luxurious texture, which you only get with propa Rocky Road.

    Then there’s:

    Little puffy marshmallows dotted throughout, not only providing a lovely bit of squidge and colour but also giving the Malteser Rocky Road a contrasting texture.

    Plus:

    Broken malted milk biscuits (or cow biscuits as we called them when my boys were little), roughly chopped and holding their own, they work with the Maltesers to enhance the malted milk flavours and give bursts of crunch.

    And a few:

    Raisins for a bit of chew: I love chocolate covered raisins (in fact absolutely anything with dried fruit, especially my Easy Boiled Fruit Cake). So introducing raisins was nonnegotiable for me.

    Then of course:

    Maltesers! The pièce de résistance! I confess that I am having a bit of a Malteser fad at the moment, having recently made Malteser Cake. A 189g share back of Maltesers is needed for this Malteser Rocky Road in total. roughly half are added to the mixture and the rest crown the top.

    And…

    ... it is just sooooooo INCREDIBLY QUICK and EASY
    ... is great fun to make with kids

    Equipment

    Instructions

    • rocky road in tin with Maltesers on top
    1. Melt your butter and golden syrup gently over a low heat.
    2. Add your chopped dark and milk chocolate and stir until totally melted.
    3. Allow to cool.
    4. Mix in your marshmallows, raisins and broken malted milk biscuits.
    5. Add your Maltesers and mix everything thoroughly together.
    6. Tip into your lined baking tin and even out.
    7. Refrigerate for 3-4 hours until totally set.
    8. Melt your white chocolate and drizzle over the top of your Malteser Rocky Road.
    9. Pop on your remaining Maltesers pressing them into your melted white chocolate to fix them in place.
    10. Once your white chocolate has set, cut into squares and devour.

    Top Tips

    If your chocolate doesn't melt thoroughly place the butter, syrup and chocolate mixture back onto a low heat and stir until melted.

    Grease your baking tin before covering it with your greaseproof paper, it will ensure it sticks and does not move when you add your Rocky Road mixture.

    Mix your biscuits, raisins, marshmallows together before adding them to your melted chocolate so as to ensure they are evenly mixed in.

    Always use good quality chocolate. I use Lindt 70% Cocoa dark chocolate and Cadburys Dairy Milk (affiliate link). This Rocky Road only has a few ingredients so they need to be of good quality.

    Variations

    Rocky Road needs to encompass a good mix of flavours and textures for it to be confidently named as such. It’s kinda like the RR law. Adhering to that basic rule, you can then stick anything you like in there. Within reason of course...🤔

    So you need to ensure your Rocky Road encompasses:

    • a bit of chew: chewy jellies work well, cut up into small chunks;
    • something soft: marshmallows really are your best option here, but you could use flavoured ones to change things up;
    • added crunch: peanuts are the obvious choice here, I only chose not to put them in this Malteser Rocky Road recipe because my son is not a fan;
    • something crisp: any biscuits are fine to use. Digestives (Graham Crackers) work very well;
    • and of course chocolate: I added more milk chocolate than dark because I have a very sweet tooth! However switching the quantities around so that you have more dark than milk chocolate may appeal more to your taste buds!

    Storage

    Keep refridgerated for best results.

    You can freeze Rocky Road in an airtight container.

    It is fantastic to make ahead of time, especially if you want to bring it out as a treat at Christmas for example.

    FAQ

    Where does Rocky Road originate?

    Australia! Apparently! Or that seems to be the best educated guess. It seems the first recorded evidence of Rocky Road appears in 1853, when enterprising Aussie sellers mixed confectionary, which had suffered during its long voyage to their shores, with nuts and chocolate. But…it is also claimed that it was invented in the US in it same century…so who knows?!

    What is the difference between Tiffin and Rocky Road?

    Tiffin is very similar to Rocky Road and is British by origin. It’s very much the same in terms of ingredients except it includes cocoa and tends to be more of a traybake and therefore thinner. However, there is a fine line really between the two, so you can easily get away with calling this Malteser Tiffin if you prefer.

    Here's what you'll need...

    • 9 x 9 inch baking tin
    • Small saucepan
    • Wooden spoon

    Ingredients you'll need...

    Malteser Rocky Road

    • 120 g unsalted butter (US = ½ Cup or 1 stick)
    • 4 tablespoon golden syrup
    • 100 g 70% cocoa solids dark chocolate broken into small pieces (US = 0.6 Cup)
    • 200 g milk chocolate broken into small pieces (US = 1 Cup and 1 tbsp)
    • 50 g small marshmallows (US = 1½ Cups)
    • 50 g raisins (US = ⅓ Cup)
    • 50 g malted milk biscuits broken into small pieces
    • 100 g Maltesers (roughly half of a 189g share bag)

    Topping

    • 50 g white chocolate (US = ⅓ Cup)
    • 89 g Maltesers

    Here's what we do...

    Malteser Rocky Road

    • Grease your baking tin and then line it with greaseproof (baking) paper, crossing over so that both sides and the base of the tin are covered.
    • Add your butter and syrup to your small saucepan and melt slowly over a low heat.
    • Mix in your dark and milk chocolate until totally melted.
    • Leave to cool.
    • Add your marshmallows, malted milk biscuit pieces and raisins and mix in. You may find it easier to mix these separately first and then add them all together to ensure they are evenly mixed in.
    • Add your Maltesers and mix thoroughly together.
    • Place in your prepared tin and spread out evenly.
    • Refrigerate and for 3-4 hours until totally set.

    Topping

    • Melt your white chocolate by chopping it up and placing it into a heat proof dish over a gently simmering pan of water. Stir until melted.
    • Dip a teaspoon into the chocolate, hold it high over your set rocky road and drizzle over.
    • Refridgerate until set.
    • Cut the Malteser Rocky Road into 16 pieces.
